Yuzu juice
Also known as Citrus junos, the yuzu is a citrus of the Rutaceae family, along with the lemon, orange, grapefruit and lime. It is usually used raw. The flavour is delicate, sweet and similar to that of clementines. It is used to flavour sponge cake, choux buns, or as a secret ingredient in more unusual chocolate, praline and ice cream preparations, though it is also a perfect match for steamed vegetables and has long been one of the key ingredients in top-of-the-line preserves.
